Amazing crock pot roast with potatoes and carrots is such a delicious and moist dinner. If you are going to work, or just have a busy day, place the roast, potatoes and the carrots in the crock pot and by dinner time you will be happy that you made this.

I am not a big meat eater when it comes to roast and steak, but I am pretty sure that I could have eaten this whole roast by myself! It was so moist and I couldn’t even cut it. The roast just fell apart. Then we put some butter, and a little more salt and pepper on the potatoes and carrots and wow!! It was a fabulous dinner. Loaded with so much flavor.

Cooking the amazing crock pot roast with potatoes and carrots for a longer amount of time on a lower heat, made it so flavorful.

So let me ask you how are your new years goals coming along? It seems like the time goes so fast that there hasn’t even been time to think of goals.

So this is the week. I need to at least start on some new goals. Get back to exercising and eating just a little bit healthier. I will just watch out for extra sweets like I ate too many of during the holidays. I couldn’t let all that yummy stuff the neighbors gave me go to waste!!!

But now it is time to get back into shape and enjoy some good healthy foods. I do need to make some pan sugar cookies though. One of my friends that is 82 years old told me that she loved making sugar cookies, but that they were too much work.

How Long Can I Keep Roast Beef in the Refrigerator?

  • Raw roasts, steaks, and chops (beef, veal, lamb, and pork) will keep up to 3 to 5 days in the refrigerator.
  • Cooked meat, poultry, and seafood can be kept in the refrigerator for up to 3 to 4 days.

So I suggested that she make pan sugar cookies instead, because they taste just as good, and they are just a lot less work. I might just have to show her my favorite recipe. And you could decorate them however you want!

Anyway, let me know what your new goals are and lets get supporting one another. Exercise 5 days a week for 30 minutes. There; you have mine! Good Luck, and we can do this!

Tips and Tricks For Crock Pot Roast with Potatoes and Carrots:

  • We like to serve our roast with some gravy made from one package of store bought gravy packet mix and then I add 1 cup of juice from the roast and 2 – 3 Tablespoons flour mixed in with 1/4 cup cold water. Mix it all together and cook until it thickens.
  • If you want a change, you could also add some sweet potatoes.
  • Also some times I put butter over the potatoes and carrots and eat them that way. So yummy.
  • Searing the roast first helps lock in moisture and flavor when cooking it.

I used a eye of the round because they were buy one get one free. I have also used a rump roast and it was great as well. I like to get a roast with just a little bit of fat for flavoring, but not too much fat because I don’t want to pay for fat. I hope this helps.

Sorry, but pork roast in a slow cooker like this sucked in my opinion. The seasoning never really roasts in the meat, so while outside is tasty, the meat itself is bland and liquid just has the veggies sitting in broth like in soup. Forget it! Roast in the oven the good ol fashion way!

I am not sure why you shared the same opinion twice from different email addresses, but here is my reply to your previous comment. I have actually never used a pork roast for this recipe, so I can’t say if that is different than the beef roast that I use, but our meat has never been bland, and we love the vegetables cooked with the meat. Thank you for sharing your opinion. We definitely all have different tastes. Have a better day!

Why do you even have to comment? If you do not like something then don’t make it? It’s that simple. People are so rude! My family and I loves this recipe, thanks for sharing!

What is the texture of the vegetables like after cooking them for this long? I don’t want them to be mushy. Also, would using whole baby carrots work?

I have found that it takes a bit of time to get the vegetables cooked. The potatoes might get a little soft, but the carrots are usually just right. I don’t mind the potatoes to be a little soft because I usually mash them and put gravy on them. And you can always stop cooking the dish as soon as the middle of the meat reaches 145 – 160 degrees. The carrots take so long to cook in the crock pot, I always cut them in smaller pieces. Thank you, and I hope this helps!
