Is Peanut Butter Keto Friendly?

Peanut butter is keto friendly however you have to check the nutritional label on different brands. You want to use brands that are just peanuts and without added sugar.

Most natural or no sugar added peanut butters are low carb and keto.

Ingredients I Used.

The ingredients for these peanut butter chocolate chip cookies are no sugar creamy peanut butter, egg, cream cheese, baking powder, Swerve brown sugar, Swerve confectioners sugar, peanut butter powder and Lily’s chocolate chips.

I bought most of the ingredients for this recipe at Aldi. But I had to buy the peanut butter powder, Swerve products and Lily’s chocolate chips online. Sometimes Aldi has the peanut butter powder though.

Substitutes: You can use whatever sweetener you have on hand if you don’t have Swerve. Try Lakanto products if you have them. Also you can use use double the white sweetener and leave out the brown if you don’t have it.

Also if you have a sugar free or low carb chocolate bar you can just chop that up and use it in place of the chocolate chips. Or you can leave them out all together.

Let’s Make Some Peanut Butter Keto Cream Cheese Cookies!

This is a pretty straight forward cookie and this recipe makes 15 good sized cookies. Here’s how you make them.

  1. Using an electric mixer, beat together cream cheese, Swerve confectioners and brown sugar. Make sure to get all of the cream cheese whipped into the sugar. It should look like frosting.
  2. In a separate bowl, mix the dry ingredients (peanut butter powder and baking powder) then add that to the cream cheese mixture.
  3. Next add the egg and peanut butter and lastly fold in the chocolate chips.
  4. Using a cookie scoop add the cookie dough to parchment paper covered cookie sheets. The cookies will not spread so you might want to press them down a bit to flatten them.
  5. Bake in a 350°F oven for 10-15 minutes until firm to the touch and golden brown.
  6. Let them cool before eating and they will get firmer. Store in an airtight container.

How to flatten the sticky cookie dough.

Take spoonfuls of dough and place on the cookie sheet. Take a large piece of wax paper and spray with cooking spray. Place over the cookies and press down to flatten them.

Can I Freeze Them?

Yes I like to keep them in the freezer for a sweet treat after dinner. I eat them cold but you can let them come to room temperature.

Because they are a cake-like cookie, they don’t get too hard in the freezer and that’s why you can eat them frozen.

Recipe Tips And Notes.

  • Make sure to use no sugar added peanut butter for less carbs.
  • You can substitute a chopped up low carb chocolate bar instead of Lily’s chocolate chips if you have trouble finding them.
  • If you don’t have both Swerve powdered and brown sugar sweetener you can use ½ cup of what ever sweetener you have on hand. (As long as it’s a 1:1 substitute for sugar – not stevia). Also you can use granulated sugar substitute instead of powdered if want.
  • The cream cheese can be cold instead of room temperature. Just make sure you really cream it with the sweetener. This will also make the dough easier to scoop out when it’s colder.
  • These cookies will not spread so that is why you want to flatten them down on the cookie sheet.
  • Don’t over bake the cookies or they will be dry.
  • Freeze these cookies for a quick keto snack on the go. I eat them cold but you can let them come to room temperature if you wish.
