Do you have kids? I do. As much as I daydream about going out for dinner with my family the truth of the matter is it’s expensive. While this statement may make me sound cheap, I would rather spend my money on quality ingredients and share the experience with friends then head out to a restaurant.

One of my favour meals to enjoy is a grilled steak topped with mushrooms with a big stuffed potato and a side of Caesar salad. Got you drooling yet?? Yeah, me too. People say they go out for “a steak dinner”, but really it’s the baked potato people rave about.

If you knew your $150 dinner at a restaurant could feed a crowd of 8 (with lots of wine) would you sacrifice your night out? And I’m not cutting corners here. We’re talking all the fix’ns and all the trim’ns that will leave your guests begging you to host again the following week. I’ll let you in on my secret weapon: Litehouse Caesar dressing.

Steaks: sprinkle a little salt and pepper on those bad boys and you’re done.
Mushrooms: sautee with onions, butter and fresh herbs. Done.
Wine: glasses and cork screw. Done.

There’s a lot of different ways you can make up a twice baked potato but with Litehouse Caesar dressing, you’re making it SO easy on yourself.

This dressing was so good I was cutting up vegetables just so my family and I could eat this dressing out of the jar. It was so fresh! None of those other warm, off the shelf dressings can compare. Cold is where it’s sold! Yup! Check out the refrigerated section in your produce section to find these Litehouse dressings. Trust me. It’s not just the Caesar dressing I had the utmost pleasure of sampling. My daughter begged for veggies to dip in the dressing all week in her school lunches.

So back to these potatoes tho! The Litehouse dressing takes all the guesswork out of how to flavor your potatoes. Bake up some big russet baking potatoes, scoop out that potato and mix in some goodness. These potatoes are inspired by the classic Caesar salad that everyone loves with bits of bacon and parmesan cheese added in with the Caesar dressing for added flavor. They’re so good; you could make a meal out of just a potato and be completely happy. I know. I was.

These potatoes can be made up in advance and heated up at dinner time. Oh, and what will you do with the extra dressing in the jar? Only make a big bowl of the best damn ceasar salad you’ll ever have to go with your dinner! *mic drop*

Twice Baked Caesar Potatoes

Servings 6 servings

Ingredients

  • 6Russet potatoes
  • 3tablespoonsolive oil
  • 8slicesof baconcrumbled
  • ½cupsour cream
  • ½cupmilk
  • 1cupLiteHouse Ceasar Dressing
  • ¼cupbutter
  • 1cupparmesan cheese + extra for sprinkling
  • ½teaspoonpepper

Instructions

  1. Preheat the oven to 400 degrees F.

  2. Scrub the russet potatoes in cold water to ensure they are clean and place them on a baking sheet. Drizzle the olive oil over the potatoes and rub to evenly coat. Pierce the skin of the potato with a fork a few times each potato. Bake for 1 hour, making sure they're cooked all the way through.

  3. Remove the potatoes from the oven and set aside to cool slightly. Lower the oven to 350 degrees F.

  4. Using a knife cut each potato in half lengthwise. Scoop out the insides of the potato using a spoon and place in a large bowl. Make sure you do not to tear the potato skins, leave a small rim of potato intact for support. Arrange the prepared potato shells on a baking sheet.

  5. Once your potatoes are all scooped out, add the butter, sour cream milk, cheese, pepper and LiteHouse Ceasar Dressing into the potatoes. Mix with a hand held blender until well combined. Stir in ¾ of the bacon, reserving some for the top of the potatoes.

  6. Fill the potato shells with the potato mixture. Top each potato with a sprinkle of parmesan cheese and the extra bacon. Heat in the oven until the potato is warmed through and the parmesan cheese is golden brown, about 20 minutes.
